Portuguese Tart: Homemade pastry VS Frozen Puff Pastry

Portuguese tart (pastéis de nata) - tart yang berasal dari Portugal. Portuguese tart has flaky and crispy crust when hot. Filled with creamy egg custard, antara favourite takeout Ema dari kedai kek & pastri.






Hari ni singgah kedai alat dan bahan kek. Sejak kena tempias CoVid-19, stok kedai yang ala kadar, sedikit sebanyak sudah bertambah.


Waktu nak mencari heavy cream, tiba-tiba nampak satu produk yang very interesting... "Instant cream" untuk portugese egg tart. Tiba-tiba nak buat portugese tart versi malas XD. 


Banyak resepi online pakai frozen pastry jenama "Kawan". Tapi Ema skeptikal, dulu pernah buat portuguese tart pakai this readymade pastry. Kulit pastry terlebih mengembang (leavening), antara lapisan doh dan butter, resulting custard overflow. 


Anyways, Ema akan buat Portuguese tart pakai (1) Frozen readymade pastry dan (2) pastry from scratch.

As expected.... The good side, the pastry memang tersangat flaky and crispy, tapi the filled cream was "overfilled".





Versi 2 | Pᴀsᴛʀʏ ᴄʀᴜsᴛ ꜰʀᴏᴍ sᴄʀᴀᴛᴄʜ


Dulu rajin buat pastry from scratch, sekarang tulang keras. It is a labourious works to make a puff pastry dough. Nak kena tunggu rolling-folding-refrigerating repeatedly takes hours. Sebab itulah ada inovasi puff pastry frozen.

Cross-sectional pakai homemade pastry lagi cantik. Filling pun boleh tuang banyak tanpa risau teroverflow. Tapi tesktur crust kurang flaky, little bit crunchy tapi tak macam kulit tart telur biasa.  Ema terlebih tabur tepung bila uli...sorry








Anyway, review RICH'S "Portuguese egg tart" cream custard. 907 g/ 1 kotak. Rasa tak manis, eggy and creamy. 1 kotak boleh fill 40 tart shells bersaiz besar! Ada dark brown spots on the surface, the signature mark for Portuguese Egg Tart indicating sugar caramelization.


Konklusinya, homemade pastry lagi better, more filled custard. Untuk puff pastry frozen, there are other ways to use it, maybe not to make Portuguese tart. 


Kalau rasa nak version lagi malas. Pergila kedai, RM10 dapat 5 biji.
